Baruch is a Chef with 20 years of experience. Today he shares simple solutions you can implement as a Chef or crew member to aid in the elimination of food waste onboard. We also explore the topic of crew food allergies and requirements. How that affects the Chef’s role and what you can do to support him/her.
One thing we forgot to mention in this episode, but that I find extremely important as part of the role of eliminating food waste, is to take expiry dates with a grain of salt. You can use a simple app like Foodkeeper to search the latest safety expiring guideline for each aliment (cooked or uncooked). Another thing you can do is to donate the “expired” food. Search the food donation safety guidelines in the country that you are in, to ensure that you are following the rules. Before you dump something in the trash bin, check if is till good, use or donate it. You have the power to change the world, use it wisely.
