Jo Parsons, Visually Impaired Chef, Life in Lockdown

In this podcast you will hear me catching up and having a chat with visually impaired chef Jo Parsons who lives in the beautiful South Hams area of Devon with husband Bret and their lovely dogs.
Jo has worked in the catering industry for a number of years providing delicious and tasty meals all cooked with love for everyone to enjoy.
If you are a keen listener to BBC Radio 4’s In Touch programme you may have heard me interview Jo a couple of times before for the programme. The last time was in spring last year when I visited Jo to experience one of her legendary Pudding Club lunches which help to fund her Cooking with Confidence classes which provide cooking lessons for visually impaired people to boost their confidence in the kitchen and help to improve their cooking skills.
In my Zoom interview with Jo, I managed to catch her just after a lemon drizzle cake had been put into the oven which Jo had made for an elderly lady in Salcombe. While we waited for the cake to finish baking and with Bret tidying up in the background We chatted about how life in lockdown had affected her catering business Jo’s Kitchen. What made Jo want to start up the Gourmet Meals on Wheels service — providing fabulous meals to vulnerable, elderly and isolated people around her home and to neighbouring villages. And also how Jo and Bret had been coping generally so far in lockdown.
